Makes enough for 10 servings

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Drink (produces 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Cordial: Combine the listed components in a saucepan, heat until it reaches a simmer, stirring to dissolve. Then, remove from the heat allowing it to cool down fully. Pour into a sterilised bottle, close it keeping it in the fridge, it will last for about four weeks.

To make Cocktail Base: Pour all the liquids into a sizeable container, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.

To serve: Measure 85ml of the batch mix into your stirring glass containing ice, and stir lightly for one minute to cool it down. Pour to a frosted cocktail glass or equivalent, top with some cranberries adding the final touch by giving it a brief mist of mandarin oil above the glass.
